I'm always trying to find something new and interesting to make on the nights it's my turn to cook in the Moreland household. I've seen too many episodes of Trisha's Southern Kitchen, Beat Bobby Flay, and Chopped to just slap a frozen pizza in the oven every  night.  Well, I had a hankering for some tacos the other day, and I knew that Husbando would be down with that.  Well, if you're not careful, chicken can get pretty dry when you're cooking it.  So I wanted to be sure to fight that with a marinade.  I got it from a website called Le Creme Dela Crumb!

Marinade

  • 1/3 cup oil
  • juice of 2 limes
  • zest of 1 lime
  • 2 teaspoons brown sugar
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon Italian seasoning

I put some fresh chicken breasts with the ingredients in a bag and let it sit for about three hours.  Then, I put them in my cast iron skillet and let em brown up.  They were delicious tacos, and became great leftover chicken nachos the night after.
