You guys, I've been trying for quite a while now to become a better cook, bit by bit.  And sometimes, I've done pretty well.  I've figured out how to poach things.  I hardly ever have to open the transom window in the kitchen when I'm cooking. Baby steps.

NJ, however, my beloved fiancée,  is not a fan of cooking.  He can do the basics when necessary, but he doesn't ENJOY it.   If there's something that can be prepared by placing an item on a baking sheet and then leaving it in a oven for about ten minutes, he's an expert.

And of course, we have discovered some things along the way, together.

We have learned, for example, there are certain foods one should never, ever, microwave. We have learned these things... the hard way.  Please, Gentle Reader, learn from our mistakes.

1. Hard-boiled eggs.

It builds steam within the egg, and can lead to an eruption whenever the egg is cut into. Or even worse, when you bite into it.  Now, you CAN microwave scrambled eggs, but you do have to watch them carefully.

2. Foods rich in vitamin C.

Like broccoli, bell peppers, berries, and leafy greens. When exposed to heat, the vitamin C is destroyed. It's recommended to eat these raw whenever possible.

3. Chicken.

Food safety wise, reheating chicken is safe. But it won't be yummy. All of the moisture evaporates, leaving the chicken with a weird taste and texture.  You can't get something crispy again in the microwave.  These days I just throw em in the toaster oven.

4. Seafood.

Now admittedly, this is one we knew already.  But it can't hurt to remind you about it. Basically microwaving anything seafood is guaranteed to dry it out. It's from the SEA, so high heat is not ideal. Unless you like rubbery fish, then go for it.  But nobody will love you in the work breakroom.

5. Steak.

If you microwave steak, it causes an uneven reheat. It will dry out in certain spots, while other parts remain cold.  And honestly, I've never gotten it right, so I don't bother with that either.  If I have leftover steak, I'll tend to wrap it in tin foil and put it in the oven.
