Husbando has some levels of pride when it comes to dinner time. We alternate days when we cook, and when it's "his night", he almost always feels like he has to pull out all the stops. He used to be a cook in the 90's and 2000's, and so he wants to show off his skills every now and then.  I tell him he doesn't have to re-invent the wheel every time it's his night, but he doesn't listen.

So he got inspired the other day to make some southern dishes. It was a mix of stuff that was already made, and some that was made from scratch.  Chicken and Waffles With Grits!

I don't know exactly where his inspiration to go southern came from. Maybe just saw chicken strips in the freezer and built on that.  That's how it works a lot of the time, though, right?  You use what you've got.  I try to keep pork, chicken, beef and turkey in the freezer most of the time, so we have some variety.

I don't think most nights I end up topping something like that.  Sometimes I'll just put a freezer dinner in the oven and have done with it.  But now, since they were so filling, I've got like, almost a whole pan of leftover cheesy grits.  The challenge: what to do with them? I'm going to have to scour the internet and find some recipes to repurpose them, maybe. I saw a video about a dude who cut the grits into like, patties and fried them up?  What are you suggestions?  Favorite leftover ideas?  I'll take em!
