We have all heard this time and time again: "Eat healthy to stay fit and feel great! You can afford it! Healthy food TASTES good!" But in a world filled with limited time to cook or take a healthy lunch break, find healthy food that tastes good, and who can afford that $8 jar of almond butter? I know I can't. But we all want to look and feel our best. So what is the next option? The 'healthy' menu at some restaurant? NO NO NO. You can afford to eat healthy and you will love the taste! How is this possible you ask? Well, it's rather simple, really. Here is an example menu for one day with prices and recipes that are guaranteed to make stomach and pocket book stay full! You can make these in bulk meals on Sunday and take them to work the rest of the week, or whatever you decide will work great!

Teriyaki Chicken with Spinach Orzo Pasta and Mango Salsa

You will Need:

8 oz. Boneless skinless chicken breast $4.00

Bottle of teriyaki marinade $1.50

16 oz. box of Orzo Pasta $1.50

1 cup of Spinach $.60

2 lemons $1.00

1 cup of shredded Parmesan cheese $2.00

1 mango $.50

1 tomato $.50

1 lime $.25

1 minced garlic clove $.10

1 bunch of cilantro $.50

2 tbsp of green onions $.50

Pinch of suagr

Pinch of salt

Total: $12.95

Preheat the oven to 400 degrees. Place the chicken breast in a shallow glass pan, or any baking dish and coat the chicken in the marinade. Set aside until oven in preheated. In the meantime, cut the mango, green onion, and tomato into 1/4 inch cubes and place in small mixing dish. Roughly chop the cilantro and add to the mango and tomato mixture. Squeeze one lime and one lemon into the mixture (be sure to take out any seeds). Add a pinch of salt and a pinch of sugar. Mix all ingredients together, cover, and place in refrigerator. The oven should heated at this point, so go ahead and place chicken in oven. Set timer to 25 mins. Then, in a large pot, bring four quarts of water to rapid boil. Add the orzo pasta and cook until al dente (9 mins). While the pasta is cooking, in a small skillet add minced garlic clove to a medium heat. Once garlic in tender, add the spinach and one squeezed lemon (watch for seeds!). Cover and let the spinach steam. Once the pasta is done, drain the water and add the spinach mix to the cooked pasta. Add the cheese and mix around.

Serve the cooked chicken on a bed of Orzo pasta and add mango salsa to the top of the chicken!
